Sausage and Green Chile Breakfast Burritos

I could stop with the title and not write anything after, its that good.  One of the best things I’ve done with my life lately is add roasted green chilies to random dishes that I’ve been making.  One of those dishes, are these breakfast burritos.  I LOVE breakfast burritos, any way you want to make them (bacon, caramelized onions, feta cheese… ahhhh…)

Seriously, the list goes on and on with what you can add in them, but lets get back on track…. GREEN CHILIES!!!! (and the heavens shined down)  Here’s what I do:

  • cook and brown up breakfast sausage, or even hot italian ground sausage (trust me, its delicious) and set aside in a bowl or on a plate, mostly just let it cool slightly and be taken out of whatever rendered grease is in the pan (you don’t want super greasy sausage in your burrito)
  • take a large burrito sized tortilla and put it on a plate
  • start assembling what ingredients you want inside your burrito, and start to put them right on the tortilla
  • Add cheeses around the tortilla (I use shredded cheddar, makes it easy)
  • take the green chilies and spread them around evenly on the cheese (usually come all chopped in a can, just drain and use)
  • then what I do is put the plate in the microwave so its ready to go once the eggs are done (A MICROWAVE?! yes… it makes it so easy, and I like things easy)
  • Scramble up a couple eggs in a pan (I’ve found that 2 is a good amount that won’t overfill the tortilla, also FARM FRESH makes a huge difference in taste)
  • turn on the microwave (approx 30 seconds) to heat up the tortillas, making them easy to wrap as well as melting the cheese
  • when it comes out I toss in some sliced avocados, sauteed onions (or any veggies), the sausage that was set aside, and the scrambled eggs
  • Roll it up like any other burrito, and chow that thing down like its the best thing you’ve ever had…because it will be…because green chilies in a breakfast burrito makes the world go round

There’s so many things you can do with this, and what’s better than a delicious, fast, and easy breakfast to start your day?… So feel free to try your own out, and have fun with it!
